Bunnyhugger’s Coronation Egg Salad

As one of the SpinDizzy Easter bunnies, I enjoy coloring eggs for my Easter basket. After the holiday I am usually left with a lot of eggs that I wasn’t able to give away. This year, I decided to make my surplus eggs into coronation egg salad sandwiches.

Coronation chicken – so called because it was created for Queen Elizabeth II’s coronation – is a popular dish in Britain, often eaten on sandwiches. I have borrowed the two most distinctive flavors of coronation chicken, curry and apricot, to make this very simple egg salad recipe. It makes four sandwiches.

Chop the eggs into small pieces and place in a bowl. Add the mayonnaise, apricot preserves, and one tablespoon of curry powder, and stir with a fork until mixed well. Add additional curry powder to taste. Spread the egg salad mixture onto the bread slices to make four sandwiches.

Note About Eggs

Please use eggs from humanely-raised chickens. Visit the World Society for the Protection of Animals’s Eat Humane site for help locating humanely-raised eggs at your local grocery store. In the United States, Hellmann’s (also known as Best Foods) Light mayonnaise is now being made with eggs that have been certified humane. This has not yet extended to their other products.
